bibo’s Head Chef Jose Silva was the award-winning fine dining Head Chef at Guillaume at Bennelong for 12 years, and our Restaurant Manager, Jonathan Mallet and Assistant Sommelier, Ambroise Moriceau were both born in France. We’re excited to showcase an incredible menu with dishes exclusively available at this wine dinner, matched with some of our favourite French wines selected by Head Sommelier, Louella Mathews.
